Bannock

Simple, slow, great food for the fire. Flour, water, a teaspoon or so of baking powder per pound of flour, season with salt…and then add whatever you fancy – I like a little mild oil, honey, dried cranberries and raisins. Knead and cook in a frying pan facing the fire – propped up works well to get a nice browned top. An unleavened bread – staple of those bushcraft experts, the native American Indians, the Inuit and the First Peoples of Canada. Now much loved in Scotland. Can’t beat it.
